To make Genmaicha & Marshmallows, Jeni started with her favorite tea: genmaicha, a green tea made with toasted rice. When genmaicha is steeped cream, the resulting soft green ice cream tastes nutty and slightly tannic from the tea, and has this wonderful toasted rice scent. To give the flavor dimension, without overwhelming the nuance of the toasted rice, we add vanilla bean marshmallows, handmade in our kitchen. They give the exotic-sounding Genmaicha & Marshmallows a familiar spin—almost like the classic crispy rice cereal treats made with gooey marshmallows.
