Our very labor-intensive, very popular Brambleberry Crisp ice cream begins in our bakery. There, we make from scratch the buttery, oven-toasted oat streusel. Once it’s out of the oven, it’s time to make the other major element of the ice cream—the striking brambly berry jam. The jam is made by cooking down black currants, Ohio blackberries, and black raspberries. The final step: layer streusel and jam by hand throughout voluptuous vanilla ice cream.
