Buttercup Pumpkin with Amaretti Cookies

As soon as the Buttercup pumpkins arrive from central Ohio’s Schacht Family Farm, we get down to the business of splitting, spicing, and roasting. There’s perhaps not a more comforting, close-your-eyes-and-inhale-it-all aroma all year in the kitchen than this. Once the pumpkins are out of the oven, the kitchen team pulverizes them together with warming spices and grass-grazed Ohio milk. Meanwhile, amaretti cookies will have been baked, crumbled, and will be added to provide a little crunch and almond flavor throughout.
