As soon as the Buttercup pumpkins arrive from central Ohio’s Schacht Family Farm, we get down to the business of splitting, spicing, and roasting. There’s perhaps not a more comforting, close-your-eyes-and-inhale-it-all aroma all year in the kitchen than this. Once the pumpkins are out of the oven, the kitchen team pulverizes them together with warming spices and grass-grazed Ohio milk.
