Guava Buttermilk Frozen Yogurt Ice Cream Sandwich

A knife-and-fork ice cream sandwich inspired by the Tropics is just the thing to brighten up any winter day. To make the Guava Buttermilk Frozen Yogurt Sandwich, we blend guava juice, biodynamic yogurt, cream, and tart buttermilk. Buttermilk, which is slightly acidic, thickens the cream to give it a lovely crème fraîche texture. The hand-piped almond macaroon cookies—gluten-free and made from scratch—are tinted pink using beet powder. (And, for the beet-averse, don’t fret: the beet powder influences the hue of the cookies but not the flavor.)
