Roasted Strawberry Buttermilk begins with little, in-season, jewel-like strawberries grown just for us in Tennessee and Ohio. Grown for flavor rather than looks, they’re juicy, fragrant, and sweet but have a tart edge. In our kitchen, we roast them for just a few minutes to evaporate some of the water and concentrate the flavor. The addition of buttermilk helps draw out the subtle tartness of the berries, which we make sure to completely purée. The result is a creamy, incredible flavorful, wonderfully aromatic summer ice cream.
