Every year, we count down the days until Ohio strawberry season — when Strawberry Buttermilk is back in shops. Because for a few fleeting weeks, we get to enjoy Strawberry Buttermilk with Gooey Butter Cake: a long-running, secret-menu-esque pairing that tastes like a strawberry shortcake.
This year, we decided to make things official with a parfait. Layers of real strawberry sauce and whipped cream elevate our favorite seasonal ice cream combo to a heavenly springtime confection. Bursting with freshness, lightness, and “holy moly, that’s so good”-ness. We can’t wait to share our Strawberry Shortcake Parfait in scoop shops nationwide, for a limited time.

The recipe
Strawberry Shortcake Parfait
Makes 6 generous parfaits
2 pints fresh strawberries, hulled and sliced
1 cup sugar
1 pint Strawberry Buttermilk
1 pint Gooey Butter Cake
Fresh whipped cream
In a large bowl, toss strawberries and sugar. Let sit for at least 3 hours in the refrigerator.
To build the parfait, place one scoop of Strawberry Buttermilk into a bowl. Spoon 1/4 cup of macerated strawberries on top (be sure to get some of the liquid). Top with a dollop of whipped cream. Add one scoop of Gooey Butter Cake. Top with an additional 1/4 cup of macerated strawberries and more whipped cream. Enjoy!
